This was the final line of the final episode of Seinfeld in 1998. The entire show was an inside joke about the answer to this question. It showed that Jerry and his friends would do anything for a laugh, including lying and deceiving their fans. The show began as a story about Jerry and his friends who met and became friends on a day that they were waiters at Monk’s Café.

They didn't want to be waiters, but they had to wait tables so they could pay for their apartment. They were worried about how to keep their apartment because they didn't have money to pay the rent. A new neighbor moved in next door and asked them what they were doing as he walked by.

Jerry responded with an exaggerated shrug of the shoulders and said, "We're waiting tables." When the neighbor asked him how he knew they were waiters, Jerry replied with "Because we're wearing white jackets." Thus, Seinfeld began and continued as a story about waiting and white jackets (and not much else).
